Segment Type

Technomic defines foodservice segments that categorize the industry into distinct groups based on operational characteristics and consumer engagement. Segments are based on self-identifying selections the attendee made during registration.  

Examples: Restaurants & Bars, Noncommercial, Travel & Leisure, Retail, and Other Foodservice. 

U.S. Market

Technomic markets are based on US Census Metropolitan Statistical Areas (MSAs), compiled from data provided in the attendee’s registration location. MSAs are geographic regions with a high degree of social and economic integration, typically centered around a core urban area with a population of 50,000 or more. There are approximately 390 defined MSAs in the US.  

Examples: Chicago, Orlando, and Phoenix. 

Total Market Food service Location

Market Units refers to the total number of foodservice locations within a specific Metropolitan Statistical Area (MSA), encompassing all foodservice segments. This metric provides a snapshot of the foodservice industry's physical presence and operational scale in each region. The data is compiled from a variety of trusted sources, including annual reports, operator surveys, franchise disclosures, government publications, and location directories. 

Example: The Chicago MSA has 28,182 foodservice locations. 

Market Sales Forecast

Market Forecast refers to the projected percentage change in foodservice sales within a specific Metropolitan Statistical Area (MSA). Technomic generates and reviews forecasts using advanced modeling techniques that incorporate a range of factors, including economic trends, inflation rates, migration patterns, company performance, industry dynamics, and changes in foodservice locations. 

Example: The Chicago MSA forecast is +4.3%. 

Market Segment Sales Forecast
